Growing up in Michigan, I was all about apple cider and any apple cider flavored thing I could get my hands on… I mean, c’mon, I grew up right near a cider mill after all!

After moving to New York, it was wild to me that people didn’t know the difference between apple juice and apple cider. For the record, there IS a difference. Apple juice is made from juiced apples and is often filled with sweeteners, sugars, and preservatives. Apple cider is the unfiltered, unsweetened, and unprocessed liquid derived from pressed apples. Apple cider is highly perishable and can contain yeast, which can ferment and turn it into the alcoholic, hard ciders we see in the liquor store. Be sure to read the label and nutrition facts, in detail, to ensure you get what you want — juice or cider.

Now what you’re really reading for…because what conversation about apple cider doesn’t include apple cider vinegar? Apple cider vinegar is apple cider that has been fermented twice. The first fermentation process turns the cider into alcohol and the second process turns the alcohol into acetic acid and malic acid.
