Celery…are you picky about it? Maybe you’re cool with it in soup but raw sticks as a snack are a hard pass. The dieting community loves celery for losing weight. I remember being told a million times in my old dieting days that celery was a “negative calorie food” because the body burned more calories chewing and digesting it than the celery had itself, creating a net deficit. FullStop. Please, don’t start eating celery all day because of this!
Instead, let’s dig into the nutrition and health benefits of this vegetable because it’s so much more than that.
Celery comes from the same family as carrots, parsley, and parsnips. Like its siblings, celery offers vitamin A, vitamin C, vitamin K, folate, and potassium. You’ve probably heard it’s mostly water; this is true. Celery is mostly water and fiber; 1 cup of celery sticks actually gives us 5 grams of dietary fiber. And while this does make celery a low glycemic food, the fiber and water content contains a polysaccharide, which in animal studies, has suggested that it may decrease instances of stomach ulcers and improve the lining of the stomach.
